Moped Performance Issues

I have a Chinese made TaoTao 50cc which I've been trying to beef up.
I've made some heavy modifications, but I'm not getting the performance I want. This is a list of what I've changed.

• 100cc big bore kit
• Big bore cylinder head
• Upgraded CDI timer
• Upgraded timing chain
• Improved spark plug w/ a hotter load
• Performance exhaust
• I know i the previous owner did modify the roller weights, but I'm not positive on those
• And bigger jets on the carburetor

When I first got it I struggled to reach 30mph; now it has significantly increased acceleration, but I top out between 35 and 40mph. Any suggestions on what to change or add?

I've heard if you put a rocket on the back it helps

Well I usually just switch out the gas with Mountain Dew and red bull and that usually does the trick...
