i dont see a problem with over saturating.
what exactly are you using in ps to do this to your pictures.

aaand honest to god i think every photographer should try out film.
b/c it gives you a better understanding of things.
developing it too.

even though for the most part film is dead :(

I shoot film alot in class and i develop in class and print in class, with black and white.

i just don't scan it on to a computer.

and i used the sat tool on PS alot lol

oh good thats great :)

watch out when you saturate for skin tone.
it makes everything brighter and happier but itll mess around with skin, because some pictures people are too red or too yellow so use dodge and burn
also plants tend to look strange so play around with the hue to make them as natural as possible.
or manually saturate certain points.
also i dunno if it just when you upload it, but if you saturate too much or sharpen it itll make things have funny texture so use a blur with a faded rimed brush.

PS for some reason it looks nice when you burn the concrete at parks. so i dunno play with that.
photoshop does a lot of great things, dont limit yourself to one tool.

PPS scan your stuff i want to see it.

oh and hey you know if you select something with lasso and use some adjustment or filter itll just do it to that object.
its kinda ate for me so if i make no sense thats why.

UPDATE!!!
me and my friend michael went street skating today and i shot some photos with my Digi and my film camera hopefully they turn out good. Ill post the film ones once i get develop the film at school and get the negatives on a cd.
