Sean, Its proper HDR.
Corey the Church one is a panorama(pan up and down) with like 4 different exposures(Like a dark photo, a normal photo, a lighter photo and a really light photo or whatever) and then you merge them together using either photomatix or dynamic photo to create like really light and dark photos that look cool
