should I just clear the old votes and unlock the threads?

Rob, there is no un-delete feature haha. When you delete something, it's best to check the little box that says "physically remove" so you don't see the annoying "thread deleted by ___" thing.
I've never used the edit poll thing, if it works go for it. Use whatever means necessary to get the final threads ready to go, as soon as possible haha.

Edit: i went delete crazy. Everything is fresh.
I Unlocked all the threads that needed NO tweaking at all
Added the new options to new threads
(replicated some without seeing the "edit poll" feature)
and cleared all previous votes.
it is a brand new start to the voting. All threads ready to go.
you'll either be pissed or pleased, haha.
all that needs to happen is to open the forum

deleted the repeat threads that needed the options. every thread is still there (best categories etc)
also you can un-delete deleted threads, the drop down list on moderation on the forum haha but it has to be a soft delete

Oh haha, I've never used the un-delete because i always physically remove haha. You pwnt me! I'll probably let everyone view the threads later tonight but im just about to peace out now and don't really have time to fix something if it doesn't go smooth.
