Having a second double clamp on creates a pressure point on the bars higher than the forktube, which means it has a much higher chance of breaking. The only reason 2 clamps might be needed is if you had a really long ass fork.
the reason you're having trouble is because you're used to a RUP. That has an 81* HT. 2 degrees difference makes HUGE changes. Youll get used to it after a while, I was the same way for a few days till i got used to a high headtube angle. Don't worry
